Irresistibly crispy buttery potatoes perfect for any meal.
Ingredients:
  • 20 baby red or yellow potatoes (1 1/2 to 2 inches in diameter)
  • 1 carton (32 oz) Progresso™ vegetable broth
  • 1/2 cup butter, melted
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 2 tablespoons finely chopped chives
Instructions:
  • Preheat your oven to 450°F and generously spray a 18x13-inch rimmed pan with cooking spray.
  • In a 5-quart Dutch oven, combine potatoes and broth. Bring to a boil over high heat. Reduce heat to low and simmer for 30 to 35 minutes, until potatoes are fork-tender. Drain, saving the broth for later use if preferred. Shake the pot over low heat to remove excess moisture from the potatoes. Remove from heat.
  • Mix together melted butter and minced garlic in a small bowl. Drizzle 1/4 cup of the garlic butter over the potatoes and toss well to coat. Arrange the potatoes in a pan and press down on each potato with the bottom of a glass or measuring cup until they are about 1/2-inch thick. Finish by drizzling the remaining garlic butter over the top and season with salt.
  • Bake for 35 to 40 minutes, flipping halfway through, until golden and crispy. Place on a serving platter and garnish with chives.
