Crispy Grilled Pizza Margherita

Grill fresh pizza with mozzarella, basil, and tomatoes for a delicious summer night outdoors.
Ingredients:
  • 1 (16 ounce) package pizza dough, at room temperature
  • 0.25 cup olive oil
  • 4 ounces shredded Asiago cheese
  • 3 large tomatoes, thinly sliced
  • 1 cup packed whole basil leaves
  • 8 ounces fresh mozzarella cheese, shredded
Instructions:
  • Preheat a sizzling hot outdoor grill and lightly oil the grate.
  • Allow the pizza dough to rise in a bowl until it triples in size, approximately 1 hour. Dust a work surface and a rolling pin with flour. Divide the dough in half and roll each portion into a 10- to 12-inch circle.
  • Transfer pizza dough rounds onto the hot grill using a pizza peel, close the lid, and grill until the bottom develops grill marks, 3 to 5 minutes. Then, flip them over onto a work surface and reduce grill heat to medium.
  • Brush each round with flavorful olive oil. Generously layer half of the savory Asiago cheese on each crust; follow with juicy tomatoes, fragrant basil, and creamy mozzarella. Finish by sprinkling with a pinch of salt and a crack of black pepper.
  • Use a wooden paddle to move the pizzas to the grill and close the lid. Grill until the bottom of the rounds has grill marks and the cheese is melted, about 7 to 10 minutes. Take the pizzas off the grill and allow them to rest for 5 minutes before serving.
