Crispy Honey Sriracha Chicken Wings

Try Chef John's honey sriracha wings for crispier game day perfection.
Ingredients:
  • 2 tablespoons baking powder
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 2.5 pounds chicken wing sections
  • 0.33333334326744 cup honey
  • 0.33333334326744 cup sriracha sauce
  • 1 tablespoon seasoned rice vinegar
  • 0.25 teaspoon sesame oil
  • 1 pinch sesame seeds, or as desired
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a baking sheet by lining it with aluminum foil topped with an oven-proof wire rack.
  • Combine baking powder, salt, black pepper, and paprika in a small bowl and whisk until well mixed.
  • In a large bowl, coat chicken wings evenly by sprinkling half of the baking powder mixture over them and tossing. Repeat with the remaining mixture, ensuring wings are well coated.
  • Place the wings neatly on the rack of the baking sheet you have prepared.
  • Place the wings in the preheated oven for 20 minutes. Flip the wings over and bake for another 20 minutes. Flip the wings again and bake until they are golden brown and crispy, approximately 15 more minutes. Transfer the wings to a large bowl.
  • Prepare the glaze by combining honey, sriracha sauce, rice vinegar, and sesame oil in a bowl. Mix until smooth. Drizzle the glaze over wings and toss until fully coated.
  • Place the wings on a serving platter and generously sprinkle sesame seeds on top.
