Crispy buttermilk-marinated chicken breasts coated in seasoned stuffing mix and baked to golden perfection.
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 2 cups buttermilk
  • 2 cups crushed herb-seasoned stuffing mix
  • 1 cup all-purpose flour
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons peanut oil
Instructions:
  • In a large resealable plastic bag, combine chicken breasts and buttermilk. Massage the bag to ensure the chicken is coated with buttermilk, remove any air from the bag, seal, and refrigerate for at least 1 hour.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Put herb-seasoned stuffing mix into a shallow bowl. Combine flour, salt, and black pepper in a flat dish. Whisk together egg and water in a separate bowl. Drizzle peanut oil into a 9x13-inch baking pan.
  • Pat dry the chicken after removing it from the buttermilk. Coat it in seasoned flour, dip in egg, and press into stuffing mix. Transfer the coated chicken breasts to the pan with peanut oil.
  • Bake the chicken breasts in the preheated oven for a total of 50 minutes, flipping them halfway through, until the chicken is fully cooked and the coating is crispy.
