Crispy fried chicken fillets: juicy, tender, and perfect for sandwiches or as a side dish.
Ingredients:
  • 2 (8 ounce) boneless, skinless chicken breasts
  • 0.66666668653488 cup buttermilk
  • 1 tablespoon Buffalo sauce
  • 1.5 teaspoons garlic powder
  • 1 cup all-purpose flour
  • 1 teaspoon poultry seasoning
  • 0.5 teaspoon ground black pepper
  • 0.25 cup olive oil, or as needed
Instructions:
  • Thinly slice each chicken breast horizontally into 2 fillets. Combine the chicken with buttermilk, Buffalo sauce, and garlic powder in a resealable bag. Seal and shake well to coat the chicken evenly. Refrigerate for a minimum of 2 hours or overnight.
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Mix together the flour, poultry seasoning, and pepper in a shallow dish or pie plate using a fork or whisk until well combined.
  • Take out the chicken from the marinade and gently shake off any extra. Coat the chicken in the breading mixture until both sides are evenly covered. Dispose of any leftover marinade.
  • Drizzle oil generously in a large skillet and heat over medium-high heat until shimmering. Place 2 chicken fillets in the skillet, leaving space between them. Cook until crispy and golden brown, about 2 to 3 minutes per side. Drain on paper towels, then fry the rest of the chicken in batches as needed. Transfer to a baking sheet.
  • Bake the chicken breasts in the preheated oven until cooked through and the juices are clear, about 8 to 10 minutes or until an instant-read thermometer registers at least 165 degrees F (74 degrees C).
