"An delectable pork stir-fry with a surprising twist of grapefruit."
Ingredients:
  • 1 large ruby grapefruit
  • Peanut oil or extra light olive oil, to deep-fry
  • 200g dried rice vermicelli noodles
  • 4 small French eschallots, peeled, thinly sliced
  • 2 garlic cloves, crushed
  • 2 green chillies, deseeded, finely chopped
  • 500g pork mince
  • 32.00 gm brown sugar
  • 48.80 gm fish sauce
  • 500.00 ml bean sprouts, tails removed
  • 1 green chilli, extra, thinly sliced
Instructions:
  • Peel and remove the bitter white parts from the grapefruit. Use a bowl to collect any juice while separating the segments, then chop the grapefruit flesh.
  • 1. Fill one-quarter of the wok with oil and heat over medium-high heat. 2. Cut noodles into smaller pieces. 3. Deep-fry a handful of noodles at a time until puffed. 4. Drain excess oil, leaving 2 tablespoons in the wok.
  • In a hot wok, sauté eschallots, garlic, and chillies for 2 minutes until fragrant. Next, add mince and stir-fry for 4 minutes. Add grapefruit flesh and juice, sugar, fish sauce, and 1 1/2 cups sprouts. Stir-fry for an additional minute until heated. Finally, introduce noodles to the mix and toss together. Enjoy!
  • Garnish with chili slices and the rest of the bean sprouts before serving.
