Crispy parmesan and thyme potato stacks

Cozy up with a classic baked potato side dish, perfect for any roast dinner.
Ingredients:
  • 800g potato
  • 36.40 gm olive oil
  • 1 tsp fresh thyme leaves, finely chopped
  • 165.00 ml parmesan, finely grated
  • Fresh thyme leaves, extra, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a large baking tray by lining it with baking paper.
  • Thinly slice each potato to a 2mm thickness, then transfer them to a bowl. Drizzle with oil, add garlic and thyme, and season generously with salt and pepper. Mix everything together well.
  • Set aside 1 tablespoon of parmesan. Arrange 8 potato slices on a baking tray. Sprinkle each slice with a bit of the remaining parmesan. Place another potato slice on top of each. Continue layering potatoes and parmesan until the stacks are approximately 4cm tall (around 10 potato slices used). Finish by sprinkling the stacks with the reserved parmesan.
  • Bake for 30 minutes until golden, crispy, and the potato is tender. Use a skewer or knife to check the center of a stack. Sprinkle with extra thyme leaves before serving.
