Crispy golden zucchini cakes, versatile as a side or vegetarian burger patty.
Ingredients:
  • 2.5 cups unpeeled shredded zucchini
  • 1 large egg, beaten
  • 2 tablespoons butter, melted
  • 1 cup panko bread crumbs
  • 0.25 cup chopped green onions
  • 0.5 teaspoon seasoned salt
  • 0.5 teaspoon red pepper flakes
  • 0.25 cup all-purpose flour
  • 0.5 cup vegetable oil
Instructions:
  • In a large bowl, mix together zucchini, egg, butter, bread crumbs, green onions, seasoned salt, and pepper flakes until thoroughly combined.
  • Form mixture into 5 generous palm-sized patties, then lightly coat with flour.
  • In a large skillet, heat vegetable oil over medium-high heat. Fry patties until they are golden brown and crispy on each side, approximately 5 minutes per side.
