Crispy zucchini chips seasoned with dill and zesty ranch, a tasty low-carb swap for potato chips.
Ingredients:
  • 1 medium zucchini, sliced
  • 1 pinch salt to taste
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon ranch dressing mix (such as Hidden Valley Ranch®)
  • 1 teaspoon freeze-dried dill
  • 1 serving cooking spray
Instructions:
  • Using a mandoline, slice the zucchini into 1/16-inch-thick rounds. Spread them out on a clean surface, sprinkle with salt, and allow them to sit for 10 minutes. Pat the zucchini slices dry with a paper towel to remove excess moisture.
  • Preheat the oven to a gentle 220 degrees Fahrenheit (105 degrees Celsius).
  • In a large bowl, toss zucchini chips with olive oil until evenly coated. Sprinkle ranch powder and dill over the chips and gently mix to distribute the seasoning.
  • Prepare 2 baking sheets with a light coating of nonstick cooking spray. Lay out zucchini slices in a single layer on each sheet, ensuring they do not overlap.
  • Bake in the preheated oven for 40 minutes until crispy, then flip slices and bake for 30 more minutes. Transfer to a paper towel-lined plate.
