Cheesy zucchini meatloaf with ranch dressing - a moist and delicious way to incorporate veggies into weeknight meals!
Ingredients:
  • 1 pound ground beef
  • 1 pound ground turkey
  • 1 cup shredded Cheddar cheese
  • 1 cup plain bread crumbs
  • 0.75 cup shredded zucchini
  • 0.5 cup diced onions
  • 0.5 medium green bell pepper, diced
  • 1 large egg
  • 1 (1 ounce) package ranch dressing mix
  • 1 teaspoon Worcestershire sauce
  • 0.25 cup ketchup
  • 0.25 cup steak sauce
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • Combine ground beef, ground turkey, Cheddar cheese, bread crumbs, zucchini, onions, bell pepper, egg, ranch mix, and Worcestershire sauce in a large bowl until fully mixed. Shape mixture into a loaf and position at the center of the baking dish.
  • Mix ketchup and steak sauce in a small bowl until fully blended, then drizzle over the meatloaf.
  • Roast in the preheated oven until fully cooked, approximately 1 hour. Use an instant-read thermometer to ensure the center reaches at least 165 degrees Fahrenheit (74 degrees Celsius).
