Homemade Italian restaurant-style treats that vanish fast.
Ingredients:
  • 1 French baguette, cut into diagonal 1/2 inch slices
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, halved
  • 6 plum tomatoes, seeded and chopped
  • 1 bunch fresh basil, julienned
  • 1 pound fresh mozzarella cheese, sliced
Instructions:
  • Preheat the broiler. Lightly brush bread slices with olive oil and place on a baking sheet. Toast for about 3 minutes under the broiler, keeping a close eye. Finish by rubbing each crostini with a garlic clove for extra flavor.
  • Transfer the tomatoes to a medium bowl and generously drizzle with olive oil, then season with salt and pepper to taste.
  • Arrange the crostini beautifully on a serving tray. Add a slice of creamy mozzarella, spoon over flavorful tomatoes, and finish off with a vibrant touch of fresh basil.
