Crumble-topped pears

Irresistible crunchy pear dessert, best with a touch of low-fat yogurt.
Ingredients:
  • 107.50 gm caster sugar
  • 4 pears (see note)
  • 25.00 gm rolled oats
  • 62.50 ml nuts (see tip), chopped
  • 13.60 gm maple syrup
  • 2.20 gm vanilla essence
  • 2 x 200g tubs low-fat vanilla yoghurt, to serve
Instructions:
  • 1. Preheat your oven to 180°C. 2. In a large saucepan over high heat, combine sugar and 6 cups of cold water. Bring to a boil. 3. Peel, halve, and core the pears. Add them to the saucepan and bring back to a boil. 4. Reduce the heat to medium-low and simmer partially covered for 15 minutes until the pears are tender.
  • In a bowl, mix together oats and nuts. Pour in maple syrup and vanilla, stir to blend. Spread the mixture onto an oven tray and bake for 5 to 8 minutes, stirring once, until golden and toasted.
  • Place the drained pears on serving plates, sprinkle with the warm crumble, and serve with a dollop of yogurt.
