Crumpet French toast with nutella recipe

Elevate weekend breakfasts with delish Nutella-filled French toast crumpets that will delight the whole family.
Ingredients:
  • 150g raspberry
  • 40.00 gm caster sugar
  • 2 Free Range Eggs, lightly whisked
  • 80ml milk
  • 10g butter
  • 6 crumpets
  • 90g Nutella
  • 70g yoghurt
  • Mixed berries, to serve
Instructions:
  • In a saucepan over low heat, gently simmer raspberries, sugar, and 2 tsp water until sugar dissolves, stirring occasionally. Increase heat to high and bring to a boil, then cook until thickened, about 1 minute. Strain the mixture through a fine sieve into a bowl, discard solids, and let it cool.
  • Combine the egg and milk in a large shallow bowl by whisking together.
  • In a large frying pan over medium-low heat, melt half of the butter. Dip half of the crumpets in the egg mixture for 20 seconds, then transfer to the pan. Cook each side for 1-2 minutes until cooked through. Transfer to serving plates. Wipe the pan clean and repeat the process with the remaining butter, crumpets, and egg mixture.
  • Spread a sumptuous layer of Nutella on each crumpet French toast. Finish with a dollop of creamy yogurt, a drizzle of vibrant raspberry sauce, and a generous sprinkling of mixed berries.
