Perfect bite-sized pizzas with versatile toppings, ideal for all snack lovers.
Ingredients:
  • 100ml olive oil
  • 1 red onion, sliced
  • 1/2 tsp dried sage
  • 250.00 ml mild blue cheese
  • 61.80 gm milk
  • 27.60 gm chopped walnuts
  • 8.00 crumpets, toasted
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 1 tsp dried basil
  • 82.50 ml black olives, pitted and chopped
  • 2 anchovy fillets, drained, chopped (optional)
  • 8 tomatoes, thinly sliced
  • 250.00 ml grated cheddar cheese
  • Fresh basil leaves, to serve (optional)
Instructions:
  • In a frypan over low heat, warm 4 tablespoons of oil. Cook onion until softened, then mix in sage and let it cool. Preheat grill to high. Combine cheese and milk, then fold in walnuts, onions, and sage. Spread the mixture onto crumpets and grill until golden, about 1-2 minutes.
  • Heat oil in a pan over medium heat. Saute onion and dried basil until onion begins to soften. Stir in olives and anchovies and cook for 2 more minutes. Preheat grill to high. Arrange tomato slices on the crumpets, top with onion mixture and cheese. Grill until golden and bubbly. Finish with a sprinkle of fresh basil.
