Irresistible juicy chicken coated in crunchy cashew nuts.
Ingredients:
  • 375.00 ml cashews
  • 125.00 ml panko breadcrumbs
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 62.50 ml fresh flat-leaf parsley, finely chopped
  • 62.50 ml plain flour
  • 8 chicken thigh fillets, halved
  • 56.88 gm extra virgin olive oil
Instructions:
  • In a food processor, finely chop cashews. Transfer to a bowl and mix with breadcrumbs, cumin, coriander, and parsley. Season with salt and pepper. Preheat oven to 200C/180C fan-forced.
  • Spread flour on a plate. Beat eggs in a shallow bowl. Coat chicken pieces in flour individually. Dip in egg, then coat with breadcrumbs by pressing gently. Place on a plate.
  • In a large frying pan over medium heat, heat half of the oil. Add half of the chicken and cook for 2 minutes on each side. Transfer cooked chicken to a baking tray. Repeat the process with the remaining oil and chicken.
  • Bake until golden brown and cooked through, about 8 to 10 minutes. Serve warm or cold.
