Flavorful crunchy chicken tacos with zesty Mexican rice - an ideal weeknight meal.
Ingredients:
  • 100g white rice
  • 400g can red kidney beans, rinsed, drained
  • 250ml chicken stock
  • 40g pkt Mexico Smokey Chipotle Seasoning or Mexican Seasoning
  • 1/2 250g pkt Mexican Tortilla Chips, finely crushed
  • 600g Australian Chicken Tenderloins
  • 1 Free Range Egg, lightly whisked
  • 80g cabbage
  • 40.00 ml red wine vinegar
  • 0.60 gm salt
  • 280g pkt Street Tortilla Wraps
  • 1/2 baby cos lettuce, finely shredded
  • 82.50 ml Creamy Jalapeno Topping
  • Coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 180°C. In a medium saucepan over high heat, combine rice, beans, stock, and 1 tablespoon of chipotle or Mexican seasoning. Bring it to a simmer, then cover and reduce heat to low. Cook for 12 minutes until the rice is tender and the liquid is absorbed. Let it steam covered for 5 minutes before using a fork to separate the grains.
  • Prepare a baking tray by lining it with parchment paper. Mix together the crushed tortilla chips and the leftover chipotle or Mexican seasoning on a flat plate. Take an egg and crack it into a shallow bowl. Dip each piece of chicken first into the egg and then into the tortilla chip mixture, ensuring it's coated evenly. Arrange the coated chicken pieces on the prepared tray. Repeat this process with the remaining chicken, egg, and tortilla chip mixture. Lightly spray the coated chicken pieces with olive oil spray. Bake in the oven for about 15 minutes or until the chicken is fully cooked.
  • As the chicken cooks, mix cabbage, vinegar, and salt in a small bowl. Allow to sit for 15 minutes to enhance the flavors.
  • Warm the tortilla wraps according to the package instructions. Lay them out neatly on a clean surface. Spread the rice mixture evenly on each wrap, followed by the lettuce, cabbage, and chicken. Finish off with a drizzle of the jalapeno topping and a sprinkle of fresh coriander. Accompany with lime wedges for serving.
