Award-winning Crunchy Crumb Pork Appetizer by Janet Harmon, Ohio State Fair Champion, made with Bisquick.
Ingredients:
  • 1 1/2 cups Original Bisquick™ mix
  • 2 eggs
  • 3/4 cup milk
  • 2 cups cooked finely chopped pulled pork (from 11.5-oz package)
  • 1/2 cup finely chopped onion
  • 2 teaspoons finely chopped fresh rosemary leaves (about 1 sprig)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup old-fashioned oatmeal
  • 1/3 cup packed brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup butter or margarine, melted
  • 1 cup finely chopped peeled apple (1 small)
Instructions:
  • Preheat oven to 375°F. Line 24 regular-size muffin cups with paper baking cups and spray them with cooking spray.
  • Combine 1 1/2 cups of Bisquick mix, eggs, milk, pork, onion, and rosemary in a medium bowl until fully mixed. Set aside. In a separate small bowl, mix 1/2 cup of Bisquick mix with oatmeal, brown sugar, and cinnamon. Stir in butter and apple.
  • Divide the pork mixture evenly among the muffin cups, then generously sprinkle each with the flavorful topping.
  • Bake for 12 to 15 minutes until lightly golden. Let it cool in the pan for 5 minutes, then transfer to a cooling rack. Serve warm.
