Lighter Banana Crumb Muffins

Light and moist banana muffins topped with a crunchy crumb topping made with applesauce for a healthier twist.
Ingredients:
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 very ripe bananas, mashed
  • 0.75 cup packed brown sugar
  • 1 tablespoon agave syrup
  • 1 egg, beaten
  • 0.33333334326744 cup unsweetened applesauce
  • 0.33333334326744 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 0.125 teaspoon ground cinnamon
  • 1.5 teaspoons unsweetened applesauce
Instructions:
  • 1. Preheat your oven to a toasty 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin with either a light greasing or paper liners.
  • In a bowl, combine 1 1/2 cups flour, baking soda, baking powder, and salt with a whisk. In a separate bowl, mix bananas, 3/4 cup brown sugar, agave syrup, egg, and 1/3 cup applesauce until well blended. Combine the banana mixture with the dry ingredients to create a smooth batter. Fill muffin cups about 2/3 full with the batter.
  • In a bowl, combine 1/3 cup brown sugar, 2 tablespoons flour, and cinnamon. Stir in 1 1/2 teaspoons of applesauce until mixture forms coarse crumbs. Sprinkle over muffins.
  • Bake in the preheated oven for 18-20 minutes or until lightly golden brown and a toothpick inserted into the center of a muffin comes out clean.
