Revamp classic banana bread with ripe bananas and applesauce for a lighter, irresistible treat.
Ingredients:
  • 1 1/4 cups sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup margarine, softened
  • 1/2 cup fat-free cholesterol-free egg product
  • 1 1/2 cups mashed very ripe bananas (3 to 4 medium)
  • 1/2 cup buttermilk
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup chopped nuts, if desired
Instructions:
  • Position the oven rack low in the oven for even baking. Preheat the oven to 350°F. Grease only the bottoms of two 8 1/2x4 1/2x2 1/2-inch loaf pans or one 9x5x3-inch loaf pan.
  • In a large bowl, combine sugar, applesauce, and margarine. Mix in egg product until well incorporated. Add bananas, buttermilk, and vanilla, beating until smooth. Gently fold in flour, baking soda, and salt until just combined. Stir in nuts and pour batter into pans.
  • Bake the loaves until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then remove from pans and place on a wire rack. Allow to cool completely for about 1 hour before slicing. Wrap tightly and store at room temperature for up to 4 days, or refrigerate for up to 10 days.
