Ingredients:
  • 2 eggs, beaten
  • 3 very ripe bananas, mashed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease or line 10 muffin cups.
  • Combine ripe bananas and eggs in a medium bowl until well mixed. In a separate bowl, whisk together flour, salt, sugar, and baking soda. Gently fold the banana mixture into the flour mixture until just combined. Optionally, add walnuts for extra crunch. Divide the batter among the muffin cups and bake as directed.
  • Place the muffins in a preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
