Budget-friendly cornflake cookies, perfect for tea. Only $0.22 each.
Ingredients:
  • 70.95 gm caster sugar
  • 59.40 gm firmly packed brown sugar
  • 2.50 gm ground ginger
  • 112.50 gm wholemeal self-raising flour
  • 75.00 gm self-raising flour
  • 64.38 gm milk
  • 500.00 ml cornflakes
  • 22 pecans
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Prepare 2 large baking trays by lining them with baking paper.
  • In a bowl, use an electric mixer to beat together butter, sugars, and ginger until creamy. Add flours and mix on low speed until just combined. Pour in the milk and continue to beat until a dough forms. Finally, gently fold in the cornflakes using a wooden spoon.
  • Take 1 tablespoon of the mixture and roll it into balls, making sure to place them 5cm apart on prepared trays to allow room for spreading. Gently flatten each ball and place 1 pecan on top of each. Bake for 12 to 14 minutes, swapping trays after 8 minutes, until they turn light golden. Let them sit on the trays for 5 minutes before transferring to a wire rack to cool. Finally, serve and enjoy!
