Crunchy bok choy salad with toasted ramen noodles, sunflower seeds, and almonds, ideal for summer BBQs.
Ingredients:
  • 3 (3 ounce) packages package ramen noodles (flavor packet saved for another use) broken into pieces
  • 0.5 cup sunflower seeds
  • 0.5 cup slivered almonds
  • 0.25 cup butter, melted
  • 0.5 cup white sugar
  • 0.5 cup vegetable oil
  • 0.25 cup red wine vinegar
  • 3 tablespoons soy sauce
  • 1 head bok choy, chopped
  • 0.5 sweet onion, chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Spread the ramen noodles, sunflower seeds, and almonds on a baking sheet. Drizzle with butter and toss until coated evenly.
  • Bake the ramen noodle mixture in the preheated oven until golden and aromatic, stirring occasionally to prevent over-browning, for around 8 minutes. Let it cool before using.
  • Combine sugar, vegetable oil, vinegar, and soy sauce in a small bowl and whisk until well blended for the dressing.
  • Combine bok choy, onion, and toasted ramen noodles in a large bowl. Gently mix with dressing until everything is evenly coated.
