Delight in this refreshing Cucumber Couscous Salad, a summer favorite bursting with veggie goodness. Perfect for picnics and meal prep, this vibrant dish with feta, cucumber, and tomato is a year-round must-have!
Ingredients:
  • 1 box (3.2 oz) Betty Crocker™ Cucumber Couscous Suddenly Deli Salad Starter Kit
  • 2 tablespoons olive oil
  • 1 tablespoon water
  • 1 1/2 cups chopped cucumber (1 large)
  • 1/2 cup diced roasted red bell pepper (from 12-oz jar)
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons quartered kalamata olives
Instructions:
  • In a 2-quart saucepan, bring 1 1/2 cups of water to a boil. Add the couscous blend from the kit. Lower the heat, cover, and let it simmer for about 10 minutes until tender, stirring occasionally. Drain, rinse with cold water, and drain well.
  • In a medium bowl, whisk together the oil, water, and vinaigrette mix from the kit until well combined.
  • Combine cucumber, roasted pepper, tomatoes, feta, and olives, mixing well.
  • Mix in the couscous blend gently. Enjoy it right away, or store covered in the refrigerator for up to three days.
