Curried Couscous Salad with Bacon

Curried couscous salad with garbanzo beans, caramelized onions, bell pepper, carrot, cucumber, and bacon in white balsamic vinaigrette.
Ingredients:
  • 4 slices bacon
  • 1.5 cups water
  • 1 cup uncooked couscous
  • 0.75 cup diced carrot
  • 0.75 cup diced cucumber
  • 0.5 red bell pepper, diced
  • 0.5 (15 ounce) can garbanzo beans, drained and rinsed
  • 0.25 cup olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon white sugar
  • 2 teaspoons curry powder
  • salt and pepper to taste
Instructions:
  • In a large, deep skillet over medium-high heat, crisp up the bacon until evenly browned, which should take about 10 minutes. Drain the bacon on a paper towel-lined plate. Once cooled, crumble the bacon slices and set them aside.
  • Leave just 1 tablespoon of the delicious bacon drippings in the skillet, then sauté the onion until it starts to caramelize. Remove and set aside the beautifully browned onion.
  • Bring water to a boil in a saucepan, add couscous, then remove from heat. Let it sit for 5 minutes to absorb the water, fluff with a fork, and allow to cool.
  • Combine the onion, cooled couscous, carrot, cucumber, red bell pepper, and garbanzos in a salad bowl, gently toss to mix.
  • Combine olive oil, white balsamic vinegar, soy sauce, sugar, curry powder, salt, and pepper in a bowl. Whisk until sugar dissolves. Pour dressing over salad, gently mix, and top with bacon bits.
