Whip up a quick and flavorful curry couscous with asparagus and blue cheese using just a few simple ingredients.
Ingredients:
  • 2.75 cups water, divided
  • 2 cups uncooked couscous
  • 0.5 cup raisins
  • 1.5 tablespoons olive oil
  • 1.5 cups fresh asparagus tips and pieces
  • 0.5 cup thinly sliced green onions
  • 0.33333334326744 cup shredded carrots
  • 2 tablespoons white wine vinegar
  • 1 tablespoon white sugar
  • 1.5 teaspoons curry powder
  • 1 teaspoon minced fresh ginger root
  • 0.75 teaspoon salt
  • 3 ounces crumbled blue cheese
  • 0.25 cup sunflower kernels
Instructions:
  • In a saucepan, bring 1 3/4 cups of water to a boil. Gradually add couscous and raisins while stirring. Cover the saucepan, lower the heat, and simmer for 8 to 10 minutes until the couscous absorbs most of the water.
  • Take the saucepan off the heat and let it sit until the couscous soaks up the remaining water, approximately 5 more minutes. Fluff the couscous with a fork.
  • Heat up the olive oil in a skillet over medium-high heat. Cook the asparagus, green onions, and carrots in the hot oil until they are tender-crisp, for about 5 minutes.
  • Combine vinegar, sugar, curry powder, ginger, and salt in a large bowl until sugar fully dissolves. Add couscous, asparagus, blue cheese, and sunflower kernels. Gently fold until kernels are evenly distributed.
