Cucumber Mint "Shrub" Soda

Homemade tangy-sweet cucumber-mint soda, refreshing for hot days!
Ingredients:
  • 4 cups water
  • 1-3/4 cups granulated sugar
  • 1-1/3 cup white wine vinegar (can substitute with plain white vinegar)
  • A handful of mint leaves
  • 1 cucumber, peeled if the peels are thick, chopped
  • Seltzer water
Instructions:
  • In a saucepan, combine 4 cups of water and sugar. Bring to a vigorous boil and simmer uncovered for 10 minutes.
  • Create vinegar simple syrup: Pour white vinegar into the mixture and simmer uncovered for an additional 15 minutes until the liquid reduces to a few cups.
  • Include fresh mint leaves: Gently fold in the fragrant mint leaves and simmer for an additional minute. Take off the heat and allow to cool for a minimum of 30 minutes.
  • Strain out the mint leaves and pour the vinegar simple syrup into a jar. Chill until ready to use.
  • In a glass filled with ice cubes and cucumber slices, combine syrup and soda water in a 1:3 ratio, adjusting to your taste preference. Stir with a spoon and garnish with a mint sprig before serving.
