Create a refreshing blackberry sage thyme shrub using the cold-process method for a perfect balance of tartness and sweetness.
Ingredients:
  • 2 cups fresh blackberries - rinsed, drained, and lightly crushed
  • 2 cups white sugar
  • 2 sprigs fresh thyme, or to taste
  • 2 sprigs fresh sage, or to taste
  • 1 cup white vinegar
Instructions:
  • Cleanse a bowl or jar. Combine blackberries, sugar, thyme, and sage. Blend thoroughly. Seal with a lid or plastic wrap. Refrigerate, stirring occasionally, until juicy syrup surrounds the blackberries, 1 to 2 days.
  • Strain out the thyme and sage from the bowl. Place a fine mesh strainer over another bowl and pour in the blackberry mixture. Gently press on the solids to extract all the juice.
  • Prepare a clean glass jar or bottle. Combine the juice and vinegar inside. Seal with a lid and gently shake to blend well. Allow the mixture to sit for a minimum of 1 day to enhance the flavors.
