Savory beef kebabs with a side of tangy pumpkin salad - a heavenly combination.
Ingredients:
  • 600g beef round eye steak, sliced across the grain
  • 15.00 gm madras curry powder
  • 1 garlic clove, crushed
  • 18.40 gm vegetable oil
  • 600g butternut pumpkin, deseeded, peeled, cut into 1cm-thick batons
  • 1 bunch snake beans, trimmed, diagonally cut into thirds
  • 3 spring onions, stems & roots trimmed, cut into wedges
Instructions:
  • Preheat grill to medium-high. Skewer beef. Mix curry powder, garlic, and oil in a bowl. Brush kebabs with curry oil. Let rest on a tray for 10 minutes to enhance flavors.
  • Boil the pumpkin in a generously salted saucepan until tender, about 7 minutes. Add the beans for the last 2 minutes. Rinse the vegetables in cold water, then return them to the pan and mix in the spring onions.
  • Grill kebabs 6cm under heat for 4 minutes on each side for medium-rare. Serve by dividing pumpkin salad on plates and topping with kebabs.
