Curried Chicken Sandwiches

Whip up quick and tasty curried chicken sandwiches for a satisfying Indian-inspired dinner in no time!
Ingredients:
  • 2/3 cup diced cooked chicken
  • 2 tablespoons reduced-fat mayonnaise or salad dressing
  • 2 tablespoons sliced celery
  • 1 tablespoon chopped peanuts
  • 1 tablespoon chutney
  • 1/2 teaspoon curry powder
  • 2 lettuce leaves
  • 4 slices raisin bread, toasted, if desired
Instructions:
  • Combine all ingredients in a small bowl, excluding lettuce and bread.
  • Lay crisp lettuce on two slices of bread. Generously spoon and evenly spread 1/2 cup of delicious chicken mixture onto each slice. Complete by adding the remaining slices of bread on top.
