Delicious coconut curry mussels, perfect for any meal - appetizer or main course.
Ingredients:
  • 1 tablespoon coconut oil
  • 0.5 red onion, chopped
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon green curry paste
  • 1 teaspoon green curry paste
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced, or to taste
  • 8 ounces coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon water
  • 1 teaspoon water
  • 1 lime, juiced
  • 1.5 pounds fresh mussels, scrubbed and debearded
  • 0.25 cup chopped fresh cilantro
Instructions:
  • 1. In a skillet, warm coconut oil over medium-high heat. Cook the onion in the aromatic oil until tender, about 4 to 5 minutes. Introduce ginger, green curry paste, lemon zest, and garlic. Pour in coconut milk, fish sauce, water, and lime juice. Let the mixture come to a lively simmer.
  • Steam mussels over flavorful sauce until they open, about 4 to 5 minutes. Transfer mussels to a large serving bowl.
  • Add fresh cilantro to the sauce and cook briefly until it becomes vibrant green, for about 30 to 60 seconds. Drizzle the sauce over the mussels and enjoy.
