Indulge in a tropical sour cream dip with just 3 ingredients, served in a fun and creative container!
Ingredients:
  • 1 pineapple (3 lb)
  • 72 pitted small ripe olives
  • 72 deveined peeled cooked medium shrimp
  • 2 cups sour cream
  • 1 1/2 tablespoons curry powder
Instructions:
  • **Prepare the pineapple:** Slice off the top of the pineapple, leaving the green leaves intact. Hollow out the fruit by cutting around the inside edge of the rind, leaving a 1/2-inch wall. Remove the fruit from the core and cut the pineapple into bite-size pieces.
  • Take each shrimp and delicately insert 1 olive into the curve of it, then spear them together with a plastic pick. Next, skewer the pineapple pieces onto the picks. Finally, artistically arrange the skewered shrimp and pineapple on the pineapple rind in a captivating spiral pattern.
  • Place a cup or bowl in the rim of the pineapple, like a 6- or 10-ounce custard cup. In a medium bowl, combine sour cream, curry powder, and salt; spoon the mixture into the cup. Cover with the pineapple top and arrange any leftover skewers around the pineapple. Serve right away or chill covered with plastic wrap until ready to serve.
