Custard-Style Mac and Cheese

Indulgent custard mac and cheese - the perfect side.
Ingredients:
  • 1 package (16 oz) elbow macaroni
  • 4 eggs, slightly beaten
  • 4 cups milk
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground red pepper (cayenne)
  • 5 cups shredded sharp Cheddar cheese (20 oz)
  • 1 1/2 cups soft bread crumbs (about 2 slices bread)
  • 1/4 cup butter or margarine, melted
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Follow package instructions to cook the macaroni, ensuring to cook for the minimum time suggested.
  • In a spacious bowl, whisk together eggs, milk, salt, mustard, black pepper, red pepper, and 2 cups of cheese until well combined. Layer half of the cooked macaroni in a baking dish, sprinkle with 2 cups of cheese, add the remaining macaroni, and pour the egg mixture evenly over the top.
  • After baking covered for 35 minutes, uncover the dish. Proceed to generously top it with breadcrumbs, a drizzle of melted butter, and the remaining cup of cheese. Return to the oven and bake for an additional 5 to 8 minutes, or until the top is beautifully golden brown and the dish is fully set.
