Savory cabbage stir-fry with crispy bacon, aromatic vegetables, and tangy vinegar.
Ingredients:
  • 1 large head cabbage, shredded
  • 0.25 pound bacon, chopped
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 0.25 cup chopped green bell pepper
  • 3 tablespoons white vinegar
  • 1 teaspoon black pepper
Instructions:
  • Bring a large pot of lightly salted water to a boil. Quickly blanche cabbage in boiling water, then immediately remove and drain.
  • Cook bacon in a large skillet over medium heat until crispy; place on paper towels to drain.
  • Leave only 1 tablespoon of delicious bacon grease in the skillet, then mix in 1 tablespoon of vegetable oil and warm over medium heat. Cook onion, celery, and bell pepper until they are perfectly crisp-tender.
  • Combine cabbage, crispy bacon, sauteed veggies in oil, vinegar, salt, and pepper in a large bowl. Mix thoroughly. Serve warm or chill for later enjoyment.
