Indulge in a delicious cookie paired with refreshing skim milk for a satisfying snack.
Ingredients:
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 tablespoons no-trans-fat vegetable oil spread
  • 2 tablespoons canola oil
  • 1/3 cup unsweetened applesauce
  • 1/4 cup fat-free egg product
  • 1 1/2 teaspoons vanilla
  • 1 cup low-fat granola
  • 4 oz dark or bittersweet chocolate, coarsely chopped
Instructions:
  • Preheat your oven to 375°F and prepare your cookie sheets by lining them with parchment paper.
  • Combine flour, baking soda, and salt in a small bowl. In a medium bowl, use an electric mixer to blend sugars, vegetable oil spread, oil, and applesauce until smooth. Mix in egg product and vanilla. Slowly incorporate the flour mixture on low speed.
  • Add granola (crush any big pieces) and chocolate chunks. Scoop rounded teaspoonfuls onto cookie sheets.
  • Bake until golden brown, approximately 8 to 10 minutes. Allow to cool on the cookie sheets for 2 minutes, then transfer to cooling racks. Let cool completely for about 30 minutes.
