Impress loved ones with a rich dark chocolate skillet cookie cake.
Ingredients:
  • 200g butter, chopped
  • 220g caster sugar
  • 2 free range eggs, lightly whisked
  • 8.80 gm vanilla extract
  • 300g plain flour
  • 2.50 gm bicarbonate of soda
  • 100g Dessert 70% Cocoa speciality cooking chocolate, chopped
  • 375ml ice-cream
  • 125g raspberries, to serve
  • 100g Dessert 70% Cocoa Specialty Cooking Chocolate, extra, melted
Instructions:
  • Preheat your oven to 180 degrees Celsius.
  • In an ovenproof frying pan, combine butter and sugar over medium heat. Stir for 2 minutes until the butter melts. Remove from heat and let it cool for 10 minutes.
  • Combine eggs, vanilla, flour, and bicarbonate of soda into the butter mixture until just mixed. Spread evenly in the pan. Sprinkle with chopped chocolate and press into the dough. Bake for 25 minutes until golden brown and slightly firm. Let it cool completely in the pan. Cut into wedges and serve with ice cream, raspberries, and melted chocolate on top for a delightful treat.
