Indulgent brown butter chocolate chip skillet cookie topped with vanilla ice cream - a delicious start to fall baking.
Ingredients:
  • 3/4 cup (170g) unsalted butter
  • 3/4 cup (75g) brown sugar, tightly packed
  • 1/2 cup (50g) granulated sugar
  • 1 large egg
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup roughly chopped dark chocolate bar
  • 1/2 teaspoon flaky salt (optional)
  • Vanilla ice cream, for serving.
Instructions:
  • Preheat the oven to 350°F with an oven rack positioned in the center.
  • Brown the butter in a 10-inch cast iron skillet over medium-high heat for about 4 minutes, stirring continuously. Look for a nutty aroma and small browned bits. Once browned, transfer the butter to a large heatproof bowl, scraping off the brown bits with a rubber spatula. Let the butter cool to room temperature.
  • Prepare the cookie dough: Gently mix in the brown sugar and granulated sugar using a rubber spatula. Next, incorporate the egg, egg yolks, and vanilla until well blended. Add the flour, baking soda, and salt, stirring until just mixed. Gently fold in the chopped chocolate, knowing that some may melt into the dough if the brown butter is still warm - creating a delightful brown hue. Refrigerate the dough for up to 24 hours if desired.
  • Place the cookie dough into the skillet, spreading it evenly. Optionally, sprinkle the top with flaky salt.
