Indulge in a decadent blend of honey-kissed pecans, flax seeds, and coconut flakes with hearty rolled oats for a rich and delicious homemade granola.
Ingredients:
  • 15 cups rolled oats
  • 5 cups pecan halves
  • 3 cups unsweetened coconut flakes
  • 1 cup flax seeds
  • 2 cups honey
  • 2 cups white sugar
  • 1 cup coconut oil
  • 1 tablespoon sea salt
  • 1 tablespoon vanilla extract
Instructions:
  • First, preheat your oven to 375 degrees F (190 degrees C). Then, prepare a 13x17-inch baking dish by lining it with parchment paper.
  • Mix together the oats, pecans, coconut flakes, and flax seeds in the baking dish until fully combined.
  • In a large microwave-safe bowl, mix honey, white sugar, coconut oil, and salt. Microwave until bubbly, about 2 to 3 minutes. Whisk until well combined, then stir in vanilla extract.
  • Drizzle the luscious honey mixture over the oat mixture in the baking dish, and gently blend until perfectly combined.
  • Bake in the preheated oven, stirring every 15 minutes, until oats are a deep golden brown, approximately 1 hour and 15 minutes. Allow to cool for about an hour, then break oat clusters apart before serving.
