Honey-sweetened oatmeal cookies with dark chocolate chips and walnuts for a healthier twist on a classic dessert.
Ingredients:
  • 1.25 cups quick oats
  • 1 cup white whole wheat flour
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon kosher salt
  • 0.5 cup honey
  • 0.25 cup unsweetened applesauce
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 0.33333334326744 cup dark chocolate chips
Instructions:
  • Combine oats, flour, baking powder, cinnamon, and kosher salt in a large bowl and whisk until well mixed.
  • In a medium bowl, mix together honey, applesauce, butter, egg, and vanilla extract until blended. Add the mixture to the bowl with the flour and stir until just combined. Gently fold in the chocolate chips and walnuts into the batter.
  • Refrigerate the batter for a minimum of 30 minutes or up to 3 days.
  • Preheat your oven to 350 degrees F (175 degrees C and position the rack in the center of the oven. Prepare a large rimmed baking sheet by lining it with parchment paper or a silicone baking sheet.
  • Bring the chilled dough to room temperature for 5 to 10 minutes if very firm.
  • Using a cookie scoop or spoon, place 1 1/2-inch dough balls onto the lined baking sheet, ensuring there is 1 inch of space between each. Lightly press down on each cookie with your fingers to reach a thickness of 3/4-inch.
  • Bake in the preheated oven for 9 to 10 minutes until golden, firm around the edges, and set on top.
  • Transfer the baking sheet with the cookies to a wire rack. Allow the cookies to cool on the sheet for 2 minutes, then move them to the wire rack to cool completely.
