Indulge in these affordable and healthier choc-chip cookie bars for a delightful afternoon treat at just $0.66 per serving.
Ingredients:
  • 125g butter, softened
  • 59.40 gm firmly packed dark brown sugar
  • 70.95 gm caster sugar
  • 8.80 gm vanilla extract
  • 2 eggs
  • 150.00 gm wholemeal self-raising flour
  • 150.00 gm plain self-raising flour
  • 50.00 gm traditional rolled oats
  • 41.20 gm milk
  • 10 fresh medjool dates, pitted, chopped
  • 125.00 ml dark chocolate chips
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, making sure to leave a 3cm overhang along the long sides.
  • In a medium bowl, use an electric mixer to whip together butter, sugars, and vanilla until light and creamy. Add eggs one at a time, mixing until just incorporated. Fold in flours, oats, and milk, then gently mix in dates and 1/3 cup of chocolate chips until combined.
  • Smooth the mixture into the pan, then generously sprinkle with the extra chocolate chips. Bake for 25 minutes until golden brown and firm to the touch. Allow it to cool completely in the pan before cutting into bars and serving.
