Indulge in a fiery ginger cake with decadent dates.
Ingredients:
  • 125g butter, chopped
  • 150g date
  • 168.75 gm white sugar
  • 125g (3/4 cup) crystallised ginger, chopped
  • 2.50 gm bicarbonate of soda
  • 1 egg, lightly beaten
  • 225.00 gm self-raising flour
Instructions:
  • Preheat your oven to 180°C. Prepare a 7cm deep, 18cm square cake pan by greasing and lining the base and sides.
  • In a saucepan over medium-high heat, combine butter, dates, sugar, ginger, 1 cup water, and 1/4 teaspoon salt. Bring to a boil, then simmer on low for 2 minutes.
  • Take the mixture off the heat and gently fold in the bicarbonate of soda - watch it foam. Next, transfer the mixture to a bowl and let it sit for 10 to 15 minutes to cool a bit.
  • Mix the egg into the date mixture thoroughly. Gently sift the flour over the mixture and stir to combine. Transfer the mixture into a pan and bake for 40 to 45 minutes or until a skewer inserted in the middle comes out clean. Let it rest in the pan for 10 minutes before transferring onto a wire rack to cool. Cut into squares and serve.
