Satisfying date and tahini slice to conquer cravings.
Ingredients:
  • Melted butter, to grease
  • 160g (1 cup) wholemeal self-raising flour
  • 85g (1 1/4 cup) shredded coconut
  • 1 x 250g pkt whole pitted dried dates, roughly chopped
  • 3.75 gm ground ginger
  • 3 eggs
  • 100g (1/2 cup, firmly packed) dark brown sugar
  • 185ml (3/4 cup) tahini
Instructions:
  • Preheat your oven to 160°C. Lightly grease a 17 x 26cm lamington pan by brushing it with melted butter.
  • In a large bowl, mix together wholemeal flour, 65g (1 cup) of coconut, dates, and ginger.
  • In a medium bowl, use an electric beater to combine eggs and sugar until light and fluffy. Slowly mix in tahini on low speed until just combined.
  • Combine the tahini mixture with the flour mixture using a metal spoon until blended. Transfer the mixture to the prepared pan and level the surface with the back of a spoon. Sprinkle the top with the remaining coconut. Bake in a preheated oven for 20 minutes until a skewer inserted in the center comes out clean. Let it cool for 15 minutes, then cut into squares and serve.
