Decadent chocolate mousse pie with whipped cream on a cookie crust for a dazzling holiday treat.
Ingredients:
  • 21 chocolate sandwich cookies, crushed
  • 0.25 cup butter, softened
  • 1 cup heavy cream
  • 1 (12 ounce) package semisweet chocolate chips
  • 1 cup heavy cream, chilled
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch springform pan with 2 3/4-inch sides.
  • Prepare the crust by thoroughly combining crushed cookies and butter in a medium bowl. Press the mixture evenly into the pan.
  • Place in the already heated oven for 5 minutes then allow to cool.
  • Prepare the filling by melting together 1 cup of cream, chocolate chips, vanilla, and salt in a double boiler until smooth. Transfer the melted chocolate mixture to a large bowl and let it cool to room temperature, stirring occasionally.
  • Whip 2 cups of cream in a separate large bowl until stiff peaks form. Gently fold it into the chocolate mixture until thoroughly combined. Transfer the mixture into the cooled crust and refrigerate the pie for a minimum of 6 hours before garnishing and serving.
  • Prepare the topping by combining chilled cream and sugar in a medium bowl. Use an electric mixer to beat the mixture until stiff peaks form. Pipe the cream onto the pie using a star tip, or spoon dollops onto each slice when serving.
