Decadent Cherry Mousse Brownies

Indulgent triple-layered brownies with rich chocolates and sweet cherries.
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs as called for on brownie mix box
  • 3 oz. white baking chocolate
  • 1/3 cup whipping cream
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
  • 1/4 cup chopped well drained maraschino cherries
  • 1 to 2 drops red food color
  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup butter or margarine
  • 1 oz. white baking chocolate
  • 1/4 teaspoon vegetable oil
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or non-stick pan) and grease the bottom of a 13x9-inch pan. Prepare brownie mix according to box instructions using water, oil, and eggs. Spread the batter into the pan. Bake for 24 to 26 minutes until a toothpick inserted 2 inches from the side comes out almost clean. Allow to cool completely before serving.
  • In a medium microwave-safe bowl, heat 3 oz. white baking chocolate and 1/3 cup whipping cream uncovered on High for 1 to 2 minutes, stopping to stir once, until chocolate is melted. Chill in the refrigerator for 30 minutes until slightly thickened.
  • Blend the frosting and maraschino cherries into the chocolate mixture until fully combined. Evenly spread the mixture over the cooled brownies.
  • Place chocolate chips and butter in a small microwaveable bowl. Heat in the microwave on High for 1 to 2 minutes, stirring once until smooth. Gently spread the mixture over the mousse. Chill in the refrigerator for 30 minutes or until firm.
  • Place 1 oz. white baking chocolate and oil in a small microwaveable bowl. Microwave on High for 30 to 60 seconds, stirring once, until smooth. Drizzle the melted chocolate over the brownies and refrigerate for 30 minutes until set.
