Create a decadent chocolate-lined pie crust chilled before filling with refreshing strawberry-ginger ale mixture - a must-have for summer celebrations.
Ingredients:
  • 1 pastry for a 9-inch deep dish pie crust
  • 0.5 cup semi-sweet chocolate chips
  • 2 quarts fresh strawberries, hulled, divided
  • 2 tablespoons lemon juice
  • 0.75 cup ginger ale
  • 3.5 tablespoons cornstarch
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C). Line a 1/2-inch deep dish pie plate with pie crust pastry, then gently prick the bottom and sides with a fork.
  • Bake in the preheated oven for 10-12 minutes until lightly golden brown. Allow to cool completely on a wire rack.
  • In a saucepan over medium-low heat, melt chocolate chips while stirring constantly for 1 to 3 minutes. Coat the bottom and inside of the cooled pie crust with the melted chocolate. Chill the chocolate-coated crust in the freezer until the chocolate sets, approximately 30 minutes.
  • Arrange the prettiest strawberry in the center of the chocolate crust, cut-side down. Surround it with as many attractive strawberries as possible to create a stunning circle pattern.
  • Mash the strawberries in a bowl; transfer to a saucepan and mix with sugar and lemon juice. Boil while stirring regularly.
  • Combine ginger ale and cornstarch in a bowl, stirring until smooth. Gradually add to boiling strawberry mixture. Simmer over medium-low heat, stirring constantly, until thickened, about 12 to 14 minutes. Remove from heat and let cool for 5 minutes before using.
  • Drizzle luscious strawberry sauce over fresh strawberries nestled in a flaky pie shell. Let the pie chill in the refrigerator until perfectly set, about 8 hours.
