Crispy Puerto Rican corn fritters with a hint of sweetness and saltiness. Perfectly golden brown, served with a delicious dipping sauce for a fun snack or appetizer.
Ingredients:
  • 2 cups water
  • 3 tablespoons white sugar, or more to taste
  • 1 tablespoon butter
  • 1.5 cups cornmeal, or as needed
  • 3 cups vegetable oil for frying

  • 0.5 cup mayonnaise, or to taste
  • 0.25 cup ketchup
  • 1 pinch garlic salt, or to taste
Instructions:
  • In a saucepan, bring water to a boil and mix in sugar, butter, and salt until the sugar dissolves. Reduce heat, then whisk in 1 cup of cornmeal until smooth. Add the remaining 1/2 cup of cornmeal to create a very thick, workable dough.
  • Preheat 3 cups of vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Use 2 teaspoons of oil to grease your hands. Portion 3 tablespoons of cornmeal dough and shape into 3-inch long sticks about 1/2 inch wide. Deep-fry the sticks until golden brown in batches of 3 or 4. Drain on paper towels and keep warm.
  • Combine mayonnaise, ketchup, and garlic salt in a bowl until fully mixed; serve with cornmeal sticks for dipping.
