Cozy ham and potato soup, loaded with veggies and creamy goodness. Perfect for using up leftover ham.
Ingredients:
  • 3.5 cups peeled and diced potatoes
  • 3.25 cups water
  • 0.75 cup diced cooked ham
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup finely chopped onion
  • 2 tablespoons chicken bouillon granules
  • 1 teaspoon ground white or black pepper, or to taste
  • 0.5 teaspoon salt, or to taste
  • 5 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 2 cups milk
Instructions:
  • Prepare all ingredients.
  • In a stockpot, mingle potatoes, water, ham, celery, and onion. Allow the mixture to reach a boil; then let it simmer over medium heat until the potatoes are tender, about 10 to 15 minutes. Fold in chicken bouillon, pepper, and salt.
  • In a saucepan, melt butter over medium-low heat. Stir in flour and cook until thickened, about 1 minute. Gradually whisk in milk and continue cooking until thickened, 4 to 5 minutes.
  • Pour the creamy milk mixture into the stockpot and gently cook while stirring until it is warmed through.
