Savory spinach and kale balls make the perfect crowd-pleasing snack or appetizer for the whole family.
Ingredients:
  • olive oil cooking spray (such as PAM®)
  • 1 (16 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup finely chopped onion, or more to taste
  • 5 tablespoons olive oil
  • 1 teaspoon olive oil
  • 2 large eggs, beaten
  • 1 (16 ounce) package frozen kale, thawed and drained
  • 1 cup dry seasoned bread crumbs
  • 0.25 cup grated Parmesan cheese, or more to taste
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground thyme
  • 0.5 teaspoon dried rubbed sage
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon dried oregano
  • 2 pinches ground black pepper
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by spraying with cooking spray or lining with parchment paper.
  • In a large bowl, mix together spinach, onion, 5 tablespoons plus 1 teaspoon of olive oil, and eggs. Add kale, bread crumbs, Parmesan cheese, sea salt, garlic powder, thyme, sage, rosemary, oregano, and black pepper. Thoroughly combine everything using your hands.
  • Shape the mixture into 1 1/2-inch balls and place them on the baking sheet.
  • Bake in the preheated oven for 15 minutes, then flip and bake until golden brown, about 10 to 20 more minutes.
