Savoury monkey bread

Delicious herbed bread perfect for sharing, served with olive oil, butter, or dips. Easy to pull apart and enjoy!
Ingredients:
  • 600g plain flour
  • 4.80 gm salt
  • 1 sachet (7g/2 tsp) dried yeast
  • 5.00 gm caster sugar
  • 1 Free Range Egg
  • 375ml water
  • 80ml olive oil
  • 100g butter, melted
  • 2 garlic cloves, crushed
  • 24.00 gm toasted sesame seeds
  • 40.00 ml poppy seeds
  • 40.00 ml pistachio dukkah
  • 20g parmesan
  • 20g almond
  • 40.00 ml chilli paste
  • 40.00 ml chives, finely chopped
  • 40.00 ml flat-leaf parsley, finely chopped
Instructions:
  • In a large bowl, mix flour, salt, yeast, and sugar. Add the egg, water, and oil, then stir until combined. Transfer the mixture to a lightly floured surface and knead for 10 minutes until the dough is smooth and elastic. Place the dough in a greased bowl, cover loosely, and let it sit for 1 hour until doubled in size.
  • Preheat oven to 180C. Grease a 25cm ring or bundt pan with melted butter and dust with flour.
  • Press the dough down firmly. Transfer to a floured surface and knead until it's silky smooth. Split the dough into four portions. Take one of the quarters and divide it into 16 small pieces, then shape into balls. Repeat this process with the rest of the dough quarters.
  • Mix the remaining butter and garlic in a bowl, then divide the sesame seeds, poppy seeds, dukkah, Parmesan, almonds, and chili paste into individual bowls. Combine the chives and parsley in a separate small bowl.
  • Coat each dough ball generously with aromatic garlic butter and sesame seeds, placing them in the pan. Alternate coats with poppy seeds, dukkah, parmesan, almonds, a touch of chili, chive mixture, and more sesame seeds. Let them sit for 15 minutes to rise before baking.
  • Bake for 30-40 minutes until golden brown and fully cooked. Let it cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature.
