Delicious sweet potato scones with raisins, cinnamon, and nutmeg for a quick, nutritious breakfast treat.
Ingredients:
  • 3 sweet potatoes, peeled and chopped
  • 3 cups self-rising flour
  • 6 tablespoons butter
  • 1 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Set up a steamer in a saucepan filled with water just below the steamer. Once it boils, steam the sweet potato for 8 to 10 minutes until tender. Transfer to a bowl, then mash until smooth.
  • Combine the flour and salt in a large bowl. Use a pastry blender or fork to incorporate the butter until the mixture is crumbly. Add sugar, raisins, cinnamon, nutmeg, and allspice. Mix in 3 cups of mashed sweet potatoes until the dough comes together.
  • Transfer the dough onto a floured work surface and divide it in half. Shape each half into a circle the size of a large dinner plate, then cut each circle into 8 wedges. Place the wedges onto two 10x15-inch baking sheets.
  • Bake until golden brown in the preheated oven for approximately 20 minutes.
