Unique and rustic Depression Era peanut butter bread with a hint of sweetness, created as a resourceful solution during tough times when traditional baking ingredients were scarce.
Ingredients:
  • Nonstick cooking spray
  • 2 cups flour
  • 2 tablespoons powdered peanut butter, such as PB2® (optional)
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups peanut butter
  • 1 1/4 cups whole milk
  • 3/4 cups brown sugar
  • 3/4 cups chopped peanuts, optional
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 9x5-inch loaf pan with nonstick cooking spray.
  • Mix together the flour, peanut butter powder, baking powder, and salt in a bowl, and set it aside.
  • Combine peanut butter, milk, and brown sugar in a bowl and blend with an electric mixer until smooth. Gradually add the flour mixture and mix on low speed until just combined; fold in the peanuts. Transfer the batter into the loaf pan and spread evenly using a spatula.
  • Bake in the preheated oven for 45 to 55 minutes until a toothpick inserted near the center comes out clean. Allow the cake to cool in the pan on a wire rack for 10 minutes, then remove it from the pan and cool completely on the wire rack.
